No more grass flavoured plant milk

While plant-based drinks have been in demand, they can sometimes taste like they’ve been strained through a lawnmower. 🙂
In fact, a survey reveals that 44% of people don’t favor the taste of plant-based foods and particularly non-dairy beverages.
Companies such as Nestlé and DSM have done new research to solve this issue.-
- DSM’s innovation treats plant proteins (like peas, almonds, and soy) with phytase to enhance taste and texture. Phytase helps in removing grassy and beany taste from the plant-based products.
(Here’s the patent they filed for their research, WO2021198167A1) - Nestlé has also been working on enhancing the texture of their non-dairy beverage concentrate by balancing its viscosity.
(Find the patent on their research here CA3191364A1)Â - Chilean food-tech startup NotCo is using their AI program, GIUSEPPE (cool name right?) to analyze the structure of animal-based food (like milk), and then replicate this structure using plant-based ingredients.

Even the consumer feedback is positive for NotCo’s innovations. Some consumers said – It does not have weird aftertastes, and is thick like real milk.
